Ingredients:

  • 1 whole chicken (3-4 pounds)
  • Salt and pepper to taste
  • Olive oil or melted butter
  • Your choice of herbs and spices (such as rosemary, thyme, garlic powder, and paprika)
  • 1 lemon (optional)
  • 1 onion (optional)
  • Microwave-safe dish

Equipment:

  • Microwave with a turntable
  • Meat thermometer
  • Microwave-safe roasting rack (optional)

Instructions:

  1. Prepare the Chicken:
    • Remove the giblets from the chicken cavity and pat the chicken dry with paper towels.
    • Season the chicken generously with salt, pepper, and your choice of herbs and spices.
    • Rub the chicken with olive oil or melted butter to help it brown and add flavor.
  2. Optional Additions:
    • If desired, place a lemon (halved) and an onion (quartered) inside the cavity of the chicken. This can add flavor and moisture to the roast.
  3. Microwave Preparation:
    • Place the chicken breast-side down in a microwave-safe dish. If you have a microwave-safe roasting rack, use it to elevate the chicken and allow better heat circulation.
    • Cover the chicken with microwave-safe plastic wrap or a microwave-safe lid, leaving a small vent for steam to escape.
  4. Microwave Cooking:
    • Cook the chicken on high power for about 10 minutes per pound. For a 3-4 pound chicken, this will be approximately 30-40 minutes.
    • Halfway through the cooking time, carefully remove the chicken from the microwave, remove the plastic wrap, and turn the chicken breast-side up. Re-cover and continue cooking.
  5. Check for Doneness:
    • Use a meat thermometer to check the internal temperature of the chicken. The thickest part of the breast should reach at least 165°F (74°C), and the thigh should reach 175°F (80°C).
    • If the chicken isn’t fully cooked, continue microwaving in 5-minute increments, checking the temperature each time.
  6. Let it Rest:
    • Once the chicken is fully cooked, let it rest for about 10 minutes before carving. This allows the juices to redistribute and makes for a juicier roast.

Tips:

  • Microwave Wattage: Cooking times may vary based on the wattage of your microwave. Higher wattage microwaves may cook the chicken faster.
  • Browning: Microwaves do not brown food like conventional ovens. For better browning, you can finish the chicken under a broiler for a few minutes if you have an oven.
  • Safety: Ensure the chicken is fully cooked by checking the internal temperature to avoid foodborne illnesses.
